Classic Tofu Salad!

What you need: 

extra-firm silken tofu
1/4 cup Vegenaise or other thick vegan mayonnaise sub
1 tablespoon or 2 yellow mustard
1/2 large dill pickle, or one smaller dill pickle, sliced
1/4 cup red onion
seasoning salt
black pepper
cayenne

What you do: 

In a medium-sized bowl, mix together the Vegenaise and the yellow mustard. Add the pickle, onion, black pepper, a bit of cayenne and a dash of seasoning salt, and stir. Crush in the silken tofu and stir thoroughly with a fork, crushing a little more, until the tofu is thoroughly mixed in.
Serve on toasted bread (with avocado, maybe?) or in pitas or just eat it by itself - nom nom nom.
