Citrus Walnut "Hummus"

What you need: 

1/3 cup dry garbanzo beans, presoaked
1 tablespoon sesame seeds, unhulled
1/4 cup finely chopped walnuts
1/2 garlic clove, minced
3+ tablespoons lemon juice
1 teaspoon olive oil
salt and pepper, to taste

What you do: 

1. Soak dry garbanzo beans for 12-16 hours. Be sure to rinse twice daily. If they smell funny the first time you drain them, rinse until they don’t. Keep rinsing twice per day until they start to sprout--usually within a day and a half.
2. In a blender, pulse sesame seeds into a powder. Add sprouted garbanzos, chopped walnuts, garlic, lemon juice, and oil.
3. Blend until smooth, adding an extra splash of lemon juice, if needed.
4. Add salt and pepper, to taste. Blend just long enough to mix.
Serve “hummus” with young romaine leaves, cut veggies, or raw crackers. Citrus Walnut “Hummus” also makes a delicious base for lettuce wraps.
