1 small onion, thinly sliced
1/2 cup vegetable broth, divided
1/2 tablespoon minced garlic (2 cloves)
2 bunches broccolini, washed, stems trimmed
1 orange, juiced
1/4 teaspoon salt
1. In a large skillet over medium-high heat, saute the onions and garlic in 1/4 cup of vegetable broth for about five minutes, stirring occasionally.
2. Add the broccolini, the orange juice, the rest of the vegetable broth (1/4 cup) and the salt. Turn the heat up to high, cover, and cook for four minutes.
3. Remove the cover, give it a good stir, and cook another four minutes or until the broccolini is just tender and most of the vegetable broth has evaporated.
