Cinnamon Swirl Bread

What you need: 

1 cup nondairy milk (I use soymilk)
2 teaspoons vinegar
1 1/3 cups sugar, divided
1/4 cup vegan margarine (I use Earth Balance)
1 egg replacer (I use 1 tablespoon ground flax + 3 tablespoons water)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon

What you do: 

1. Preheat oven to 350 degrees F. Grease a 9x5" loaf pan. In a measuring cup, combine milk and vinegar. Set aside and allow to curdle.
2. In a large mixing bowl, beat together 1 cup sugar, margarine, and egg replacer. In another bowl, combine flour, baking powder, baking soda, and salt.
3. Add the flour mixture to the sugar mixture alternately with the curdled nondairy milk. In a small bowl, combine the cinnamon and remaining 1/3 cup sugar.
4. Pour 1/3 the batter into prepared pan. Sprinkle 1/3 the cinnamon sugar on top of batter. Repeat layers twice. Bake 45-50 minutes, until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes. Remove from pan to a wire rack to cool completely.
Honestly, this is one of the best recipes I've ever tried. It's like those cinnamon bread/cake like things I made from a box in the pre-vegan days. I took this to a gathering of 100% non-vegans. Everyone loved it, from the little kids, to the adults. You must try this recipe at least once. You won't be disappointed.
Variation for a healthier version: Use whole wheat pastry flour instead of all-purpose. Reduce the sugar of the dough to 1/2 to 2/3 cup. Use 1/2 margarine and 1/2 applesauce.

Crumb topping? Tell me!! This is one seems to get better and better!

i mixed some earth balance and some flour and some sugar and cinnamon together until there were crumb type things ...umm. amounts..

one tbsp margarine
1/4 c sugar
dash cinnamon
add flour and mix until it makes crumb-looking things (pea-sized!), then sprinkle on top and bake!

This bread is sooo gooood! Best of all, I whipped it up in just a few minutes . I used the alterations that Sariea suggested, so thanks! Love it, i know my family will too :)

This is the BEST CINNAMON BREAD EVER!!!!!  :)>>> I made a few changes since I did not have  all the ingredients. For the sugar that was mixed in the bread I used maple syrup instead cause I did not have any sugar so I also had to increase the flour by a cup , then I added vanilla, for the filling I used brown sugar instead and I made three layers instead of two  ;D ;D

i made these into muffins for my package exchange buddy. i added a crumb toppping and used sarieas suggestion of putting one tsp of cinnamon in the batter.
theyre super tasty. (:

...sooo my family attacked the muffins before i could say they werent for them..i made them again to send out.

This is a great recipe! I added golden raisins  and nutmeg to the top layer. The loaf didn't last ten minutes among four people. I will make this again very soon.

This is really yummy and simple to make--I used whole wheat flour and less sugar and subed vanillia soy milk for regular--I also just threw it all together without that layer thing of cinnamon and sugar--what can I say, I'm kinda lazy--but this bread tastes awesome! I used it for strawberry shortcake, but this would also be a great breakfast bread with whole fruit jam!

i didn't measure, i quickly just put some powdered sugar, cinnamon, vanilla and water into a tiny bowl and mixed, then drizzled it completely over the top.

i made this a few hours ago. i think it's pretty good. i love cinnamon. i added 1 tsp of vanilla since the other reviewer said it was bland. applesauce for the egg replacer, and used pastry flour and wheat flour. i also divided up the cinnamon. 1 tsp went into the batter. the other 2 tsps for the cinnamon mix that went in between the layers. and i also put some cinnamon glaze over it right when i took it out of the oven.

oh and i added a few tbsp of raisins. it's yummy :)

i'll upload pics once i get on my other computer.
