Cinnamon Cappucino Muffins
1 1/2 cups flour
1 1/2 cups brown sugar
1/2 cup unsweetened almond milk
1/4 cup soy cappucino milk
1 tablespoon ground cinnamon
1/2 tablespoon vanilla extract
1 teaspoon salt
1/4 cup vegetable oil
1/4 cup organic cereal (optional)
1. Preheat oven to 400 degrees F. Combine all dry ingredients in a mixing bowl.
2. Add in wet ingredients and blend together until smooth.
3. Line/spray muffin pans and fill about halfway with batter. Sprinkle with ground cinnamon and cereal (optional). Bake for 25-30 minutes.
