Chunky Veggie Spread

What you need: 

1/2 red pepper
1/2 zucchini
1/2 clove garlic
1 teaspoon tahini
dash cumin
pinch salt

What you do: 

Process ingredients until chunky or almost smooth.
Spread on sandwiches, breads, crackers, etc. It is delicious and easy! You could experiment with whatever veggies are in your fridge. I tried broccoli; not as good.

SO HOW'D IT GO?

I didn't have any zucchini but I made a variation using frozen broccoli and kale (growing in abundance in my garden).  I added a dash of ground mustard to replace the enzymes that are destroyed when you freeze broccoli and I used prepared garlic from a jar so I may have used more than 1/2 clove.  It was excellent.
