2 cups dehydrated textured soy protein
1 large green pepper
1 large yellow pepper
1 large onion
2 cans Italian style stewed tomatoes
1 can light red kidney beans
1 can dark red kidney beans
2 tablespoon chili powder (more or less, to taste)
1 tablespoon olive oil
I've received many requests for this delicious chili by very carnivorous people as well as vegetarians. It becomes even more beautiful when each bowl of chili is topped with jalapeno rings!
Add enough warm water and the chili powder to the dry textured soy protein to moisten it; set aside. Chop the green and yellow peppers and the onion, and add them to the olive oil in a large pan. Cook until moist, then add the textured soy protein. Add the stewed tomatoes and the rinsed kidney beans, stir it all together and simmer, covered for approximately 30 minutes...its as simple as that. Enjoy!
