Chocolate Snickerdoodles

What you need: 

2 1/2 Cups Gluten Free Flour (I like to use Fava Garbanzo)

2 TSP Baking Powder

1/2 Tsp Salt

4 TBSP Cocoa Powder

1 1/2 Cups Organic Cane Sugar

1/2 Cup Vegan Butter

1/4 Cup Applesauce

1 TSP Vanilla

2 TBSP Cinnamon

1/4 Cup Organic Cane Sugar

What you do: 

reheat your oven to 375

In a small bowl combine the 2 TBSP of cinnamon and the 1/4 Cup Sugar and set aside.

Mix together in a large bowl the flour, cocoa, baking powder and salt. In a stand mixer bowl cream the butter and sugar. Add the applesauce and vanilla.  Add the dry ingredients and mix until combined.

Roll  the dough mix in 1 TSP balls and roll in the cinnamon sugar mix. Place them about 1 inch apart on your baking sheet and take a fork to make little criss crosses on the top of the cookie OR flatten them slightly. I prefer the fork method, it makes a prettier cookie.

Bake for 9-10 minutes and let cool completely.
