Chocolate Ice Cream

What you need: 

1 pkg firm tofu (made from organic soybeans)
3 to 4 tablespoon unsweetened cocoa
1/4 cup maple syrup
3 squirts Stevia or 1 teaspoon vanilla extract
4 to 8 oz soy milk, regular or vanilla
optional vegan chocolate chips
optional chopped nuts
ice cream maker
blender

What you do: 

Blend all ingredients, except for the chocolate chips and nuts.
Pour into the ice cream maker and let churn for about 10 minutes.
Add chocolate chips and nuts and churn for another 5 minutes. If leaving these out, churn a total of 15 to 20 minutes.
Enjoy!

SO HOW'D IT GO?

This was great!!!!........I was skeptical about the  tofu, but it taste delicious!!!  Thanks for the recipie. I added some Vegan soy whip on top.  I don;t recommend freezing it since you cant really scoop it unless it's just my fridge....

This was fast and easy but not sweet enough for me.  I added a little extra maple syrup and it still wasn't sweet enough.  I also added chocolate chips and chopped walnuts and it's in the freezer now, as I like my ice cream solid.  If I can make it sweeter, I think this would be very good.  I was leery of a tofu-based homemade ice cream but that doesn't seem to be a problem, as far as taste goes.  It really is one of the easiest recipes ever, even for me. :)
