Chocolate Covered Crackers

What you need: 

1 bag of saltine crackers
1 cup chocolate chips (semi-sweet are often vegan, double check)
1 cup brown sugar
1 cup margarine (I use Earth Balance)

What you do: 

Line up the saltine crackers on a cookie sheet.
Combine remaining ingredients in a pan and heat on medium until melted and smooth.
Pour the chocolate mixture over the crackers.
Cool in the fridge for at least 1 hour.
This recipe may sound a little weird but it’s so good and super easy! Kinda tastes like caramel chocolate because of the brown sugar. My friend told me about this recipe and now I make it all the time!

SO HOW'D IT GO?

Do you think vegan-style graham crackers would work, instead of saltines? That just sounds so... salty.  :P

Very interesting, not what I expected.  I did cut down on the butter b/c that seemed like a lot and they were still good.  I would make them again.  I like the nut idea too.

Delicious!  I made this similar to the way that Curiale mentioned.  First, I laid out a sleeve of saltine crackers over a parchment-lined jelly roll pan.  Next, I melted just the brown sugar and Earth Balance margarine together over medium heat.  Once the mixture began boiling, I let it boil for around 3-4 minutes.  I poured this mixture over the crackers, making sure that all were covered, and baked them in a preheated 400 F oven for 5 minutes.  Immediately upon removing them from the oven, I sprinkled semisweet chocolate chips all over the top (about 2/3 of a 12oz bag).  I then put the pan back in the warm oven (temperature off) for a minute or so to help melt the chips.  Then, I removed the pan from the oven and used the back of a spoon to spread the chocolate completely over the toffee-covered crackers.  Finally, I sprinkled chopped almonds (around 1/2 cup or so) all over the top and refrigerated the pan for a couple hours.  This is so easy and super addictively tasty!  The flavor is similar to how I remember Heath bars tasting.

I made this at Passover with matzah as the 'cracker'... you just layer a cookie sheet with matzah and then follow the rest of the instructions.  Everyone loves it.  Also I saw the same recipe on cookinglight but with half the amount of margarine (and still rave reviews). Haven't actually tried that little, but I did I did try using about 3/4 of a cup probably and it still came out just as great.

Oh yea, i forgot to add that i usually bake it in the oven for 5-10 min at 350 before refrigerating it! glad it does work without baking though...oops!

i used to make this in high school all the time, but with real butter. we got the recipe from a dessert chef! the way we did it is to melt the butter and sugar and then pour that mixture on the crackers and bake it. then when it came out of the oven, we would sprinkle chocolate chips on top which would melt immediately and make sort of a marbled effect. YUMMM!!! so glad to see this recipe again, and can't wait to try it vegan style!!

Ok! The name is just bad. The end result is amazing. It's not just like a chocolate covered cracker. It's more like a heath bar. It's like chocolate covered toffee and it's fabulous! :D I alway get the crackers all crocked but who cares! These things are discustingly addictive! So cheap and easy and fattening :'( because you will not be able to stop eating these little gems! I like to sprinkle chopped walnuts on top of the chocolate (do this while the chocolate is still warm) ;D. I just can't say enough about how amazing these are.
