Chocolate Coconut Tapioca Pudding
1 cup tapioca pearls
3/8 cup (3 parts sugar, 1 part cocoa powder)
2 - 14oz cans of coconut milk
1 teaspoon vanilla
Soak tapioca pearls according to directions on package. Drain excess water, and transfer to a large saucepan. Turn heat up to high, add coconut milk, and stir constantly for about 5 minutes.
Reduce heat to low, and gradually add the cocoa/sugar mixture to the saucepan, continuing to stir. Stir constantly until desired consistency is reached, and then turn off stove. Fold in vanilla. Chill for 2 hours before serving, and garnish with coconut flakes.
*Note* This is a tapioca-dense recipe. If you do not like a tapioca-dense pudding, then use only 1/2 cup of tapioca pearls. Doing so will result in a recipe that has 4-6 servings.
SO HOW'D IT GO?
Sorry if this is obvious to everyone else but I just wanted to clear it up for myself. So, there are 2/8 cup and 2 tablespoons of sugar and 2 tablespoons of cocoa powder? Ooh I'm scared to have my awful math on display. :-\
This recipe was quite confusing. I think it should read:
1/4 c sugar
2 T cocoa
Because that is 6 tablespoons, and 6T/16T = the 3/8 cup the recipe calls for.
