Chocolate Chip PB Balls

What you need: 

1 cup organic peanut butter
2 tablespoons coconut oil
1/4 cup maple syrup
1/4 teaspoon vanilla
1/4 cup raw sunflower seeds
2 brown rice cakes, crumbled
1/4 cup oat flour
1/2 cup unsweetened dried coconut
pinch salt
vegan chocolate bar (about 3.5 ounces), cut into chunks

What you do: 

Combine all ingredients in a bowl. Form into balls about the size of a ping pong ball. Chill in the fridge. Eat!
Aren't they just the cutest?! They taste like the inside of a Reese's peanut butter cup. So good. We added coconut oil to give them a creamier texture. Now if only we can stop eating them.
