Chocolate Chip, Oatmeal and Hazelnut Cookies

What you need: 

1 cup vegan margarine (Earth Balance)
5 tablespoons ground flax seeds + 6 tablespoon water (stir together until it becomes gel-like)
3/4 cup sugar
3/4 cup brown sugar
1 1/4 cup whole wheat flour
3/4 cup hazelnut meal
1 t baking soda
1/2 teaspoon salt
2-3 cups oats
vegan chocolate chips
chopped, toasted hazelnuts (optional)

What you do: 

Cream the margarine and sugars in a large bowl. Add the flax seed mixture and mix until combined. Sift in the flour, hazelnut meal, baking soda and salt. If the mixture is too dry, add a splash of almond milk (or rice, soy, whatever you like - almond just tastes good here!). Mix in the oats, chocolate chips and some chopped hazelnuts if you have them. Bake at 350 degrees Fahrenheit for 15-18 minutes. I make mine pretty big and I got about 30.
