Chocolate Cake

What you need: 

1 1/2 cup white flour
1 cup sugar or Sucanat
3 tablespoons cocoa powder
1 teaspoon baking soda
pinch of salt
1 teaspoon vanilla extract
6 tablespoons vegetable oil
3/4 cup water

What you do: 

Mix dry ingredients, then mix liquid ingredients, then mix all together. Pour into an oiled 9X9 pan. Bake 350 degrees F for 30 minutes.

SO HOW'D IT GO?

I converted this cake to cupcakes. The recipe made about 12 cupcakes and I baked them for 25 minutes. They were OK, but the texture is more like brownies than cake. It gets a crust on the outside and is more dense than cake typically is. It might be because I made cupcakes instead of a cake, but if I were to make it again, I'd use a quarter cup of applesauce or half a mashed banana to moisten it up and given it the typical springy texture of cake/cupcakes.
