Chocolate Almond Avocado Mousse

What you need: 

5-6 medium ripe Hass avocados
1/4 cup raw almond butter
1 1/4 cup raw agave nectar
3/4 cup raw carob or organic cocoa powder
1/4 cup raw cocoa nibs ground in food processor
1 tablespoon organic vanilla extract (optional but recommended)
1/4 teaspoon Celtic sea salt

What you do: 

Select ripe avocados, firm but yielding under pressure. Peel, pit, and section. Combine in blender or food processor with remaining ingredients.
(If using raw cocoa nibs, grind to a powder-like consistency in a blender or food processor beforehand.)
Blend all ingredients together, turning with a spatula as needed until a uniform, fluffy texture is achieved.
This also works without the almond butter but I like to add it for increased richness and density. (and it adds its own protein and fiber as well)
The Celtic sea salt really takes the flavor to another level.
Enjoy without any guilt whatsoever.
