Choco Chip Muffins

What you need: 

1 cup flour
1/2 cup flaxseed
1/2 cup of sugar
1/2 of a banana, mashed (to replace egg)
2 teaspoon of baking soda
3/4 cup of soy milk
1 1/2 teaspoon of oil
1 teaspoon vanilla
1 cup chocolate chips (carob, act.)

What you do: 

1. Pre-heat oven to 350 F. In a bowl, mix all dry ingredients until well combined.
2. Mash banana until smooth and add to the dry mixture. Add oil and vanilla, stir well. Slowly add the soy milk, stirring constantly until mixture is silky and smooth like cake batter. Fold in the chocolate chips.
3. Line cupcake pan with cupcake paper/liners. Pour the muffin batter into the liners. Pop into the oven.
4. Wait about 10 to 20 min. Take out of the oven and let cool for 5 min.

can these be made without flaxseed?

i'd say so - the recipe uses banana for egg replacer. maybe fill up the 1/2 cup gap with some flour (perhaps another kind of flour i.e. soy, rice may be a more suitable sub)? should work fine, i hope!

Made these muffins this morning and they are really awesome  :)  Made a couple with chocolate chips and the rest with carob chips.    Need to be done with carob!!    They stuck a little in the paper cups so maybe need to make with out the paper cups!! ::)
