Chique Pot Pie

What you need:

2 cups vegetable broth
2 large carrots, cubed finely
2 medium potatoes, peeled and cubed finely
1 tablespoon flour
olive oil, as needed
1 large onion, chopped
5 cloves garlic, minced
1/2 teaspoon marjoram
1/2 teaspoon cumin
1 teaspoon basil
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 cup peas
1 (6 ounce) packet vegan chicken strips (I use Smart Menu chicken style strips) Crust:
3 cups flour
2/3 cup cold water
1 1/3 cups olive oil (or mix olive and canola)

What you do:

1. Preheat oven to 400 degrees F. For filling, bring vegetable broth to a boil in a medium sized sauce pan. Add carrots to broth, then add potatoes. Add flour to the broth and stir until dissolved.
2. Sauté onion and garlic in olive oil and spices until transparent. Add onion mix to the potato/carrot broth, then add in the peas, and let simmer for 15 minute or so, until the vegetables are very soft and the broth is thickened.
3. Meanwhile, mix together the crust ingredients, and separate the dough in 1/2. (one for top, and one bottom) Roll out both halves in between plastic wrap, or press with fingers into a circular casserole dish. Lay out bottom crust into dish.
4. When the filling is finished thickening, stir in the vegan chicken strips and pour the filling onto the crust-lined dish. Add the top pie crust on. Bake for 30-40 minutes, or until the crust is toasted golden.

This was really delicious! Tastes just like I remember chicken pot pie tasting. The only thing was my dad thought it needed more gravy. So next time I'll make more of the sauce and cut the chicken in little pieces (I thought they would be better in smaller pieces) but it was all really good : )

This was great! I made it a few weeks ago to celebrate (my non-veg) dad's birthday. He said, "Mmmm, you've really outdone yourself!" That's pretty impressive feedback! The only suggestion I have is to definitely use half canola for the crust. The crust was awesome (and easy) but the olive oil taste was a bit strong. Also, I made extra gravy and made this into a few miniature pies.

This pie was super tasty!  ;)b  I made it exactly as the recipe said too, except that I followed a previous posters advice on adding a little more broth and that was a mistake, I just ended up not using all of the liquid that was in the pot and it still turned out wonderfully! My meat eating husband was a big fan too!! The only other pot pie I made was my mom's old recipe sans chicken, so it was just tofu, frozen veggies, a store bought crust, and mushroom soup from a can... that one is still pretty good for how easy it is, but I don't think I can go back after this tasty version from scratch!

i made this last night for dinner and it was delicious!
i added some asparagus, celery, and half a can of Veg-All. I also added a bit more broth
it came out perfectly and was just like the pot pies i used to adore back in my non-veg days

The crust on this pie was the easiest, flakiest, pastry I have ever made and I barely had to do anything! I only made enough for the top crust and it was plenty. It needed a touch of salt but was otherwise perfect! ;)b I wasn't really crazy about the filling, but I would make this again with some changes. That said, I didn't have any potatoes and I used pearl onions instead of sauteed onion and garlic. I also had to make a roux with the flour and some oil because it kept clumping up when I added it straight to the broth. I used vegan chicken broth and homemade chicken (still a work in progress).

I've made this once before, and it is delicious. My boyfriend and I are making dinner in a couple weeks for our parents (eeek!) and I immediately thought pot pie, what with Fall coming. I want to make individual pot pies for each person, and this recipe is sooo good, I think I'll change the amounts a bit to work. Great recipe!

This pot pie is absolutely amazing!

It looked a bit weird when we (my house mates and I) were getting the ingredients mixed together, and I thought we had used too much oil.. but it turned out awesome when we cooked it!

Grats on the best pot pie recipe ever!

really, really good!
remembers me of my mom's chicken pot pie back when i was a cadaver-eater!
