Chipotle Aioli

What you need: 

6 tablespoons vegan mayonaise or sour cream
1 (6 ounce) can chipotle peppers in adobo sauce
1 teaspoon diced garlic
3 tablespoons fresh lime juice
1 teaspoon cumin
dash black pepper

What you do: 

1. If using whole chipotle peppers, run through food processor long enough to have only little chunks of peppers in the adobo sauce. Do not puree.
2. Stir in with remaining ingredients. Chill.
Source of recipe: I wanted to recreate a sandwich that I've had several times at this fantastic, 100% vegetarian restaurant in Denver called Watercourse Foods. It comes with a chipotle aioli spread.

SO HOW'D IT GO?

Worked perfect on my raw portabello avocado burger :), I only used 5 teaspoons of lime/lemon juice.

Very tasty! I had never had chipotles in adobo though I've read about it and seen it used on cooking shows. It's really quite spicy and my SO is "sensitive" to spice so I really only used about 1/3 of the can and it was perfect for us. The 3 T of lime juice was a bit too much, it turned out a bit runny so I added some cream cheese I had on hand and that worked wonders. Overall though the flavor was great and it tasted awesome on the po boy sandwich!
