Chinese Vegetable Soup w/ Pasta
1 tablespoon Olive + 1 teaspoon Sesame Oil + 2 tablespoon Soy Sauce
1 medium Purple Onion, chopped + 2 cloves Garlic, minced
1/2 cup each Bok Choy, Sweet Red Pepper, Carrots, Chinese Cabbage, & Snow or Snap Peas, Sliced &/or chopped.
1 cup Bean Sprouts
4-8 Spinach or Bok Choy leaves, sliced into thin strips
4 cups Vgetable Stock
1-2 cups small shape Pasta, cooked
Salt, Pepper, & Soy Sauce
- Cook Pasta, al dente, according to directions. Rinse with cold water and set aside. - Heat both Oils in the bottom of your soup pan. Add Onion, Garlic, Bok Choy, Cabbage, Carrots, Pepper, & Peas. Cover & saute until done to your liking. Add Sprouts & Leaves & simmer for 3 minutes. - Add the Stock & season to taste. Add Pasta to heat just before serving.
