Chili Lime Sweet Potato Fries
3 medium sweet potatoes, peeled and sliced into fries
1 or 2 tablespoons olive oil
1 tablespoon lime juice or 1 teaspoon fresh lime zest
1/3 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon paprika
1/2 teaspoon chili powder
dash black pepper
dash crushed red pepper flakes
1. Preheat oven to 400 degrees F. In large mixing bowl, place peeled and sliced sweet potatoes.
2. Add olive oil, lime juice, and spices. Toss to coat evenly.
3. Place in a shallow roasting pan and bake for 30 minutes, stirring every 10 minutes to brown and crisp evenly.
Serve with a cool creamy dip of your choice, optional.
