Chickpeas with Vegetables and Whole Oats

What you need: 

1 tablespoon oil
1 onion, chopped
1 teaspoon paprika
1 carrot, chopped
1 1/2 cups cooked chickpeas
1/2 cup cooked whole oats
1 1/4 cups spinach
Salt and pepper

What you do: 

1) Heat oil in a large pan and add chopped onion and cook 5 minutes. Add paprika and carrot. Cook for few minutes and add chickpeas and oats. Mix well and then add the spinach and cook for 10 minute more. Season with salt and pepper, as desired. Serve hot.

SO HOW'D IT GO?

Really fast and delicious.  Serve with rice and salad.  I substituted 2 cups of chopped beet leaves for the spinach.  I'll definitely try this again.
