Chickpea Salad Sandwich

What you need: 

2 slices whole wheat bread
chickpeas
mustard
soy mayonnaise
pickle relish
vegan soy cheese, optional
lettuce, optional- i like the spring greens mix
tomato slices, optional
fresh ground pepper

What you do: 

When I became vegetarian, i missed the weirdest things, and one of those things was chicken and tuna salad sandwiches. This is a good substitute, because with the mustard, mayonnaise, and relish, you can hardly tell what the main ingredient is anyway. Non-vegetarians will like it too!
Put the chickpeas, mustard, mayonnaise, and pickle relish (or whatever you would typically make meat salads with) in a bowl and mash with a fork into a lumpy consistency (should have texture, not smooth like hummous). Put cheese on one slice of vegan bread spoon chickpea salad over it. Top with lettuce and tomato slices and add pepper to taste. Put other slice of bread on top to close sandwich and slice in half from corner to corner. Yummy... enjoy! ;)

SO HOW'D IT GO?

This is such an easy recipe and I've never made it the same twice. I change it up a bit everytime. This time I used Chickpeas, Veganaise, Chopped tomatoes, green peppers, two types of chopped pickles, chopped onions, pepper and sea salt. Oh! And I never use wheat bread (Can't find any where I am), I use whatever bread I have and it works out perfectly. YUM!!! :D

i finally made this the other day and i love it!  i couldnt believe how much it resembled tuna salad, just without the fishy aftertaste! i did add capers, diced dill pickles (no relish) red onion onion, celery, dillweed, and fresh lemon juice (a must). enjoyed this on pita bread with bibb lettuce and cherry tomatoes. the leftovers were enjoyed with crudites and crackers! this definitely a favorite, thanks!

I use a pastry cutter to mash the chickpeas, and it works great!!  Also, I add a dash of lemon (if you don't want the liquid of lemon, use a small pinch of Kool-Aid lemonade, unsweetened, much cheaper than the True Lemon powder).  The lemon adds so much.

I think dijon would be good! Chickpea spread is so versatile...you can put mostly anything in it. I like to use veganaise, yellow mustard, and horseradish mustard.

Yum! But what mustard did you guys use? I used dijon cos thats all i had...thought it probably wasnt right for this recipe but it still tasted nice!

as for making (dried) chickpeas softer, i wanted to recommend throwing in some baking soda (i tsp? or so.) into the water when you soak them (before boiling). i read this somewhere else on vegweb for another chickpea recipe, never heard it before, but i works! i had this bag that usually took HOURS upon HOURS of boiling just to become edible, and then i tasted them after 1.5 hours, and they were incredibly mushy already! perfect for this wonderful recipe.

This recipe is awesome!  This is definitely going to become a regular staple in my house.  I used grapeseed oil vegenaise as "mayo" and added in some grated carrots.  I used a potato masher to mash the chickpeas.

This is by far, one of the best sandwiches I've ever had in my entire life, however I've never had a tuna salad or chicken salad sandwich so I don't know whether or not this is a suitable vegan replacement for either of those things..I used: one 15oz can of chickpeas, 2tbs soy mayo (plus additional on one half of the bread), 2tbs yellow mustard (plus additional on the other half of the bread), 2tbs+ sweet relish and a little extra of the liquid, one small red pepper diced, about 1/2-3/4 of a smallish red onion diced, green-leaf lettuce, tomato, locally-grown sprouts, lots of black pepper and a demi baguette.  I honestly was not expecting this to be quite so good and was pleasantly surprised.  It takes like 5 minutes to prepare and it's so worth it!  Definitely use a potato masher to mash everything up, and mash up the chick peas really well before mashing in the rest of the stuff.  For those who've had problems mashing the chickpeas, you may want to try using a different kind of potato masher, as some work better on beans than others.  I personally prefer to use wire potato mashers with a nice comfortable handle for mashing beans.
