Chickpea-Chip Falafel Cakes

What you need: 

1 cup falafel mix (I use Nirav brand)
1/2 cup unsweetened nondairy milk (I use Silk Organic Original)
1/2 cup water
1 teaspoon baking powder
3/4 cup flour
1/2 teaspoon minced garlic
1 (15 ounce) can chickpeas, drained and rinsed
oil, as needed (I used vegetable)

What you do: 

1. Preheat oven to 350 degrees F. Mix the falafel mix, milk, and water, stirring well. Let settle for 15 minutes.
2. Stir again. Mix in the baking powder, flour, garlic, and chickpeas. Mix well, stirring until a thick doughy consistency.
3. Spread foil on a baking sheet, then spread or spray on a thin layer of oil. Roll mixture into 1 to 1 1/2" balls and place them on the foil about 1" apart. Spray/baste the tops with oil.
4. Bake for about 12 minutes or until golden brown. The cakes will look like cookies, and you should be able to take a fork, poke them, and remove the fork cleanly.
Source of recipe: I was experimenting with some falafel mix in the kitchen, and instead of deep frying it, I thought I would try baking it like cookies.
