1/3 to 1/2 cup vegan cheese, shredded (I use Follow Your Heart Nacho style cheese)
2 whole wheat tortillas
5-7 prepared vegan chicken style nuggets, chopped
1 1/2 tablespoons canola oil, optional
1. Spread cheese in even layer on tortilla, top with chicken nuggets, then other tortilla. Follow one of the below cooking methods.
2. You can fry both sides until golden brown with the oil, or
3. Microwave quesadillas for 1 1/2 minutes. Cut into pieces like pizza and enjoy!
