Chia Berry Breakfast
1/4 cup chia seeds
1/8 cup dried cranberries
1/8 cup dried apricots, chopped small
1/2 cup freeze-dried mixed berries
1/4 cup fresh blackberries or blueberries
1/4 cup fresh strawberries, chopped small
1 cup raw almond milk
2 tablespoons raw almond or cashew butter
1/8 cup cacao nibs
1) Combine chia seeds, all the dried fruit and berries, and almond milk in a large bowl and stir well to combine.
2) Stir in the almond butter and cacao and leave to sit for at least five to ten minutes. If left in the refrigerator overnight, the flavors will combine a little more fully, and it will be thicker.
3) Top with fresh berries, and enjoy!
