Chewy, Spicy Oatmeal Raisin Cookies

What you need: 

1 cup soy margarine (230g)
1 cup packed brown sugar (or equiv. non-sugar sweetener + 1/4 cup molasses) (220g)
1/2 cup sugar (or equivalent non-sugar sweetener) (100g)
2 Ener-G egg substitute eggs
1 teaspoon vanilla (5mL)
1.5 cups flour (190g)
1 teaspoon baking soda (5g)
1 teaspoon cinnamon (5g)
1/2 teaspoon ground cloves (1g)
1/2 teaspoon salt (3g)
3 cups rolled oats (245g)
1 cup raisins (145g)

What you do: 

This began as a non-vegan recipe. I thought that the combination of spices sounded good, so I changed it a bit to make a vegan version. I've been very pleased with the results!
Preheat oven to 350F (175C). Mix up the eggs. Cream wet ingredients together with a whisk or sturdy fork. Add dry ingredients and mix well, mixing in oats and raisins last. Drop by teaspoonfuls onto cookie sheets (the cookie sheets don't knead to be greased first). Bake 9-10 minutes, until a little golden. Be careful not to over bake.

SO HOW'D IT GO?

absolutely incredible. they were chewy and spicy, as promised... i added some sliced almonds and they are perfect! thank you so much for the recipe!!!! it will most likely become a staple in our vegan home  ;)b

super good!  my changes consisted of...

3/4 brown, 3/4 white sugars
1/4 cup canola oil, 1/2 cup applesauce
2 flax eggs
1 1/2 tsp vanilla
2 tsp baking soda (on accident)
double cinnamon and since i didn't have any ground cloves i did 2 tsp each of ginger and nutmeg
1/4 cup sunflower seeds
1/4 chopped pecans
1 1/4 cups reg flour, 1/4 ww flour
1 1/2 cups oats, 1 1/2 cups 'back to nature' apple blueberry granola

i also did the double baking thing that was suggested and it was great!  made the edges a bit more crunchy - my roommate said they almost tasted carmelized, but they were still really chewy.  i think i ended up getting about 40 cookies out of this.  great recipe!

I left out the cloves and added extra cinnamon and... wow... I think I've eaten WAY too many :P... So yeah they are yumtastic!!!  :D

These were really good, and I liked how big they are. Also seem reasonably healthy since all the fat comes from plant-based oils (but dessert-y enough to not seem like granola - what fun is a totally healthy cookie, hee hee). Plus, this recipe gets points because it actually yielded 24 cookies, and I almost never get the amount of cookies that the recipe says (although that's probably my doing). I used applesauce for the egg-replacer and whole-wheat flour but otherwise made no changes. Will make these again when I need a cookie fix!

oh, and I forgot, as I prefer crisper cookies (yeah I know, why did I read a recipe that's specifically "chewy" then?) I took them off the cookie sheet, allowed them to cool for a while on a rack, then put them back into the oven for another 5 minutes or so, which made them crisp up (apparently doing this is why we Brits call cookies biscuits- biscuits is French for "twice cooked") anyway, once again- they were really good!

oh, man these were soso yummy! I doubled the amount of spice added, as I'm a bit of a spice-fiend and it didn't smell especially spicy as I was mixing it. (wow, I used the word "spice" alot there...) I ended up doing some of the mixing by hand and then whisking it afterwards, and they turned out really great! My non-vegan parents loved these and promptly asked when I was making the next batch- I was going to take some pictures, but they disappeared so quickly I didn't get a chance!

Great recipe.  I didn't have any vegan margarine on hand so I used sunflower oil.  Nice consistency and certainly chewy!  I will try this again when I have margarine to use and possibly toss in golden raisins and some toasted sunflower seeds.  My cookies look oily in the photo but that is actually from the sugar I rolled them in before baking.  This added a nice crisp to the outside while keeping the inside nice and moist.

I'll be making lots more of these in the future!

these are amazing! i didn't have any raisins so i added walnuts instead and they turned out pretty good. i had to restrain myself from snacking on the dough...

These cookies are good.  Not taste bud blasting, I just brought home a puppy, they've just started a community garden down the street great, but good.  If you're looking for a nice, spicy, chewy oatmeal raisin cookie, then you've no need to look further.  I had to cook them for about 12/13 minutes a batch, and I used whole wheat pastry flour and they turned out perfect.  Good luck!

these cookies are loved by everyone i give them too.  however, as i live in the netherlands their are comments like, "how much sugar in the recipe?  how much margarine?"  but i think it is more due a lack a baking culture, that they are not so aware of what goes in baked goods.  but, regardless, they are a big hit.
