Chewy Apricot Molasses Cookies

What you need: 

3/4 cup flour
1/2 cup sugar
2 cups oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup applesauce
1/4 cup maple syrup or other liquid sweetener
1/4 cup molasses
1 tablespoon vanilla
1 egg replace (I used Ener-G)
1 - 1 1/2 cups chopped dried apricots
1/2 cup shredded coconut
(approx. 2-3 tbsp) oil

What you do: 

Preheat oven to 350 F. Combine the flour, oats, sugar, baking soda, baking powder, and salt. Mix well.
In a separate bowl, combine the applesauce, syrup, molasses, vanilla, and egg replace. Add a splash of oil (a couple of tablespoons).
Combine the wet and dry ingredients and add the apricots and coconut as well.
Drop spoonfuls onto a greased cookie sheet, flattening them out a bit as you go. Bake 15-20 minutes until firm.
These will not be hard crunchy cookies, but fairly soft and chewy.

SO HOW'D IT GO?

I actually thought these were very molasses-y. (and I like molasses)

While making these, I realized that I had no applesauce =( . I couldn't figure out what would be a good sub for applesauce (after all, applesauce usually IS the sub. and I didn't want to assume it was replacing oil, and get some greasy cookies). *But*, I also had fresh apricots, and mashed them into a sauce to replace it - it probably works even better this way for the cookies because, well, it's apricot.

Definitely chewy. Definitely apricot. Definitely molasses. I actually think that I might try chocolate chips in these too next time; the tart/sweetness might work well with chocolate.

These are a nice, different cookie.  My family really liked them...me--not so much.  I thought they weren't very molasses-y, therefore I was a little dissapointed.  The apricot is very nice in them, however, and their texture is great!!  Maybe some spices would put them over the top.  I will experiement!

I whirred the oats in my food proccessor a bit, just to make littler pieces.  Also, I used no oil, just a tad more applesauce.  Next time I'm going to repeat these variations, as they worked well, but also add a little less vanilla, some ginger, nutmeg, and cinnamon (as in "gingerbread")  I only baked them for 10 minutes and made 24 cookies

mm! this is an absolutely delicious recipe! i made it for my partner & our roommates, and we all just devoured them . i had to bake mine a bit longer though, 20-25 minutes, but that's probably because i made the cookies big.  ;D
