Cheezy Miso Rice Noodles with Shiitake

What you need: 

rice noodles
2-3 cloves garlic
4 large shiitake mushrooms
olive oil
2 tablespoons miso paste
1/4 cup water
1/3 cup nutritional yeast
cayenne pepper
salt and black pepper

What you do: 

Begin by putting rice noodles in boiling water. Cooking times will vary depending on the thickness of the noodle.
Slice mushrooms, heat olive oil and sauté until soft. Add crushed or chopped garlic; sauté 1 more minute. Set aside.
Dissolve miso into water, mix. Add nutritional yeast to miso. Add mushrooms to miso sauce. Add a dash or two of cayenne, salt, and black pepper to taste.
By this time, your noodles should be ready. Drain, and mix sauce into noodles, and enjoy!

Really good! i added a bit less than a 1/4cup of regular soy milk to make it creamier. tasted awesome!

this was a really tasty quick meal to make with miso. i added sugar snap peas  and threw in some Braggs, too.
