Cheez Pizza

What you need: 

Dough:
2 cups flour
3/4 cup lukewarm water
1 package active dry yeast
1 teaspoon sugar
1 teaspoon salt
olive oil
Cheez:
1 1/2-2 cups unsweetened soy milk
2-3 tablespoons vegan margarine (Earth Balance works best)
2-3 cloves garlic crushed
2 1/2 tablespoons flour
lemon juice
salt
olive oil

What you do: 

Dough:
Combine the water and yeast in a bowl and let it stand until the yeast dissolves. While you are waiting for that combine the rest of the dry ingredients in a larger, oiled bowl. Combine the yeast with the dry ingredients and add 2 or 3 tablespoons of oil. Mix until it's a sticky ball. Flour a workspace and knead the dough until it's elasticy and then put it back into the oiled bowl and coat the dough with oil. Cover the bowl and let the dough rise. Ideally you should let it sit for an hour but if you're in a rush (or just really hungry) half an hour is fine.
Cheez:
In a small pot add the crushed garlic cloves and melt the margarine over medium-low heat. Once the margarine is completely melted remove the garlic add the flour and whisk until it becomes a sticky goo. Add soy milk (I always estimate, but it's safe to say probably 1.5 to 2 cups is a good amount) and whisk. While you are mixing add in a little basil, a little olive oil (about a teaspoon), a squirt or two of lemon juice and salt to taste (depending on how salty the margarine is). I usually add 5 or 6 twists of sea salt. Stir constantly until mixture starts to thicken. Turn down heat and let it thicken for a few minutes until it's extremely thick.
Construction:
Either hand toss or roll out dough on a floured workspace (probably the same one as before). Add your favorite sauce and dump the cheez from the pot onto the middle of the pizza. Spread it with a spoon and add whatever toppings you desire. Cook at 500 Degrees Fahrenheit for 12-15 minutes.
