Cheesy Squash, Tomato and Zucchini Bake
1 clove garlic, minced fine
olive oil, as needed
3 medium zucchini, sliced thin
4 medium yellow squash, sliced thin
2-3 medium tomatoes, sliced thin
vegan parmesan or vegan mozzarella cheese, to taste
salt and pepper, to taste
1. Preheat oven to 375 degrees Farhenheit. Start by lightly oiling a 9x13" baking dish, and sprinkling with the garlic.
2. Layer the zucchini, tomato, and squash in rows until the entire dish is covered. You may have some left over, depending on how tightly you pack the veggies.
3. Drizzle lightly with olive oil (or use one of those nifty sprays), and then top with the vegan cheese. Season with salt and pepper.
4. Bake, covered, for 25 minutes. Check the veggies to make sure they are soft, then urn the broiler on, and broil until brown and bubbly. Serve hot!
