Cheesy Bean and Cheese Enchiladas

What you need: 

1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon salt
1 teaspoon garlic powder
2 cups water
1/4 cup vegan margarine
1 teaspoon mustard
2 (10-ounce) cans enchilada sauce
3 (14.5-ounce) cans beans, drained (e.g., white, kidney, pinto, black)
1 (15-ounce) can olives, drained and chopped
2 medium onions, chopped
1/2 cup salsa (optional)
1/4 cup chopped cilantro
10 tortillas

What you do: 

1. "Cheese" Sauce: In medium-large saucepan, combine flour, nutritional yeast, salt and garlic powder. Whisk in water water. Heat on medium heat until bubbling and thick. Remove from heat and add margarine and mustard. Set aside 1/2 cup of the cheese sauce in separate container.
2. Except for 1/2 cup of enchilada sauce, add the enchilada sauce, beans, olives, onions, salsa, and tomato to the saucepan; stir to combine.
3. Coat the bottom of a 9" x 13" pan with some of the reserved enchilada sauce. Place a tortilla in the pan and lightly cover with more enchilada sauce. Spoon filling onto a tortilla, then roll the tortilla, and push it to one end of pan. Repeat until all tortillas are filled.
4. Pour the rest of the enchilada sauce on top and spread on reserved cheese sauce.
5. Bake at 350 degrees Fahrenheit until brown for 30 to 45 minutes.

SO HOW'D IT GO?

I thought the flavor was good :) i tried to make a layered casserole like some others had suggested, not so good :( 
i used some heart smart flour tortillas and they ended up being sticky and gooey :(
BUT the recipe was great! I ate mine on top of lettuce with some hot sauce and vegan sour cream :)

very good recipe to work with!

I made my own batch of gluten free "flour" tortillas that made about 8.

With the cheese sauce I used a little more N.Y.F. and added some potato milk powder to the water (it sweetens and thickens), added a slice of soy chedder cheese and cut the garlic in half.

And I used half refried jalepeño beans and half whole black.

This turned out really well! I used 2 cans of black beans (3 would've been too much) and the food was enough for dinner, lunch for 2 people! The flavors turned out better than I thought...this is definitely a keeper!

Don't know if you've had Vegan Gourmet but, it doesn't melt as good as that stuff, but it tastes WAY better (I think VG is repulsive...)

I would recommend it, but I don't want to be responsible if you end up hating it, lol.  My boyfriend is an omni and he loves it, so that's probably a good review...

Oh, also, I wouldn't try to make grilled cheese with it... I tried and it takes too long for it to start melting so by the time it was just starting to melt, the bread was already burning.

Anyway let me know if you try it and like it.  Where are you from?  You might have a supplier near you depending on where you are.

Yeah, I've had the Vegan Gourmet, and I'm not crazy about the cheese.  I haven't been able to find the teese anywhere around me, but I'll keep looking.  I'm in Sherman Oaks, CA and I keep checking at Whole Foods but no luck yet.  Maybe Follow Your Heart has it, I'll have to check.  If I don't find it, I'll break down and order some... but I promise I won't be mad at you if I hate it.   :-D 

Teese is made by Chicago SoyDairy.  I just went to their website and pulled a list of where it's sold in Cali... I don't know how close Sherman Oaks is to any of these places but here you go:

I meant green onions not cilantro, FYI

How is the teese cheese, taste- and texture- wise?  I've been wanting to order some, but it's a bit expensive with shipping, so I want to get an idea of whether it's worth it or not. 

I personally love the Teese...  I've had cheddar flavor and mozzarella (both are good) but haven't tried the nacho Teese yet. 

As far as texture...  the Teese, before it is melted is very soft and moist.  It tastes good cold, too, in my opinion.  As for melting it takes awhile before it starts to melt, but when it goes... so good! Don't know if you've had Vegan Gourmet but, it doesn't melt as good as that stuff, but it tastes WAY better (I think VG is repulsive...)

These were amazing!  It really tasted like cheesy enchiladas!

I only used one can of beans and added a cup of corn and it made a great filling.  It was enough to make 6 huge enchiladas.

In conclusion, try this recipe! ;)b
