Cheesy Bean and Cheese Enchiladas
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon salt
1 teaspoon garlic powder
2 cups water
1/4 cup vegan margarine
1 teaspoon mustard
2 (10-ounce) cans enchilada sauce
3 (14.5-ounce) cans beans, drained (e.g., white, kidney, pinto, black)
1 (15-ounce) can olives, drained and chopped
2 medium onions, chopped
1/2 cup salsa (optional)
1/4 cup chopped cilantro
10 tortillas
1. "Cheese" Sauce: In medium-large saucepan, combine flour, nutritional yeast, salt and garlic powder. Whisk in water water. Heat on medium heat until bubbling and thick. Remove from heat and add margarine and mustard. Set aside 1/2 cup of the cheese sauce in separate container.
2. Except for 1/2 cup of enchilada sauce, add the enchilada sauce, beans, olives, onions, salsa, and tomato to the saucepan; stir to combine.
3. Coat the bottom of a 9" x 13" pan with some of the reserved enchilada sauce. Place a tortilla in the pan and lightly cover with more enchilada sauce. Spoon filling onto a tortilla, then roll the tortilla, and push it to one end of pan. Repeat until all tortillas are filled.
4. Pour the rest of the enchilada sauce on top and spread on reserved cheese sauce.
5. Bake at 350 degrees Fahrenheit until brown for 30 to 45 minutes.
SO HOW'D IT GO?
This was soooooo good. It really surprised me because all the cheese recipes I make with nutritional yeast normally don't come out too great. This was utterly delicious and I couldn't stop eating it. I upped the nutritional yeast to 3/4 cup and I forgot to put in the onions and it was still wonderful. Thank you for this recipe. It was easy and yummy ;D
Very yummy! The cheese sauce is the best I've ever made too. I'll be keeping the recipe to use as a nacho dip.
WOW, this was fantastic! I loved the cheese sauce and am so in love with nutritional yeast now. (my first experience with it so far.) I followed the recipe exactly, I used a homeamade enchilada sauce and flour tortilla's, next time I make it I will try corn torlilla's because the flour ones seemed to be a little spongy in texture, but a fantastic recipe, my husband loved it and couldn't believe no dairy products were in it. Thanks!! :D
This recipe is really good. It reminds me of a recipe in the New Farm Cookbook, but a little easier since you don't make the chili sauce. I love the idea of adding Mexican seasoning to the cheese! I will have to try that next time.
It is really good like that, in my opinion gives it a more Mexican taste.

This was super good. I made some changes to it to fit my taste buds. First when then cheese was cooking, I added a packet of mexican rice seasoning to it. I sauted red pepper, green pepper, and the onion in some soy butter, then I added a can of black beans, and a can of refried beans(with chiles in it), the the sauted veggies. I mixed them all together then added sometaco seasoning to it before adding the cheese and salsa and I added some olives to the top. I wish I had some mexican rice to put in it, that would have been a nice touch. Even without this was too good and I plan to make this weekly.
my husbands favorite food and he's an omni. try to make it at least once a month. this recipe is so good, you can add or change almost anything and it'll still be good, didn't have any margarine, used oil came out fine. We use three cans and refried beans and they are huge when rolled. Oh, these freeze really well.... that is if they last that long.

i halved it and used a little less margarine and mustard since i don't like my ny cheese to taste so mustardy. i left out the cilantro since i didnt have any and still used two cans of beans.. one black, one refried which made it extra creamy. so delicious. yum.
these were awesome. my only comment is that the onions were a little overpowering and didn't cook all the way - which might have been due to the fact that i took these out of the oven after only 30 minutes because i was so hungry. ::)
