Chapal's Spicy Vegan Rice

What you need: 

1 package boiled brown rice
1/2 avocado
1 stalk celery
1/2 onion
1 tablespoon extra virgin olive oil
1/2 teaspoon curry powder
1/2 teaspoon crushed red pepper
3/4 teaspoon ground cumin

What you do: 

Boil the brown rice on high heat for 8-10 minutes until soft, and then drain the rice. Pour the rice in a mixing bowl. Add the avocado, celery, and the onion and mix well until combined. Add a tablespoon of the extra virgin olive oil and mix well. Toss in the curry powder and stir until mixed. Add red pepper flakes and mix. Add ground cumin and mix everything until blended.
