Celestia's Cookie Dough Base

What you need: 

2 1/4 cups flour
1 cup sugar
1/4 cup vegan brown sugar*
1/2 cup Earth Balance margarine
1/2 cup oil
1 1/2 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cold water

What you do: 

Preheat oven to 375 degrees. Mix all ingredients together well with a fork. Since this is a cookie base, add whatever you want to it -- nuts, chocolate, peanut butter, oats (though if you add a lot of oats, you may have to add something else to make it more workable), dried fruit, raisins, shredded coconut, spices (makes a great ginger bread cookie base!), whatever!
Form into walnut-sized balls and bake for 8 - 10 minutes, or until sides begin to lightly brown.
You can get away with adding a little more or just a little less of some things; though I wouldn't do it too much. I also usually add a little mint extract to mine, because I love mint. You also don't have to worry about cooking them -- every time I make them , they don't usually even make it half-way to the oven! Get creative! Have fun!
*If you, like me, don't have brown sugar on hand, just add 1/4 cup regular white sugar and 1 teaspoon -1 tablespoon blackstrap molasses, depending on how much flavor you want.
