Cauliflower and Avocado Salad
2 cups cauliflower, chopped finely
1 avocado, sliced
1/4 cup red onion, diced
1/4 cup fresh basil, chopped
1/4 cup Kalamata olives, pitted and chopped
1/8 cup red bell pepper, finely diced
2 tablespoons fresh lemon juice, optional
salt and pepper, to taste
1. Combine all of the ingredients in a mixing bowl.
2. I usually add the avocado last since it breaks up relatively easily.
3. Season to taste, but I think this is great just as it is.
I've found that letting this sit in the fridge for awhile (let's say 2-3 hours), allows all of the flavours to marinate and it tastes just lovely. One of my faves...
