Carrots and Raisins
2 tablespoons olive oil
1 clove garlic, thinly sliced
1/2 pound carrots, peeled and sliced lengthwise
1/2 cup raisins
1/2 cup white wine
salt and pepper, to taste
1. In a skillet, combine olive oil and garlic. Cook on medium for about two minutes.
2. Add carrots, raisins, wine, salt, and pepper. Stir until well mixed.
3. Cover and cook on medium low for 10 to 15 minutes, stirring occasionally. Remove and serve.
