Carrots and Nothing Else Cake

What you need: 

1/2 cup canola oil
1/2 cup apple sauce (you can use oil also if you don't want the "lower fat" version)
3 egg replacers (flax seed and Ener-g eggs both work well)
1 1/2 cups sugar
3 cups shredded carrot
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons cinnamon or pie spice

What you do: 

1. Preheat oven to 350 degrees F. Mix all of the wet ingredients and the sugar in a bowl until well mixed. Add the carrots and mix.
2. In a separate bowl, mix together the dry ingredients. Once both bowls are ready, mix together to form batter.
3. Pour into a 9x13" cake pan. Put into oven for about 40 minutes. It is done when a toothpick comes out clean. If you use other sized pans (rounds, for example) be sure to adjust your baking time.
4. Let cool and enjoy! I just put powered sugar on mine but you can be more creative.
Feel free to also add other goodies, like coconut, walnuts, or whatever sounds good to you.
Source of recipe: This is a modified version of a carrot cake recipe I have. All of the vegan recipes I was finding had other ingredients (pineapple, coconut, etc) in them. I wanted straight up carrot cake. This makes a nice, moist cake. My officemate and carrot cake lover requests this.

These where sooo freaking awesome as cupcakes I just added a tbs more of baking soda and that was that. I just brought them into the office and there GONE!  :o I will  be making this again!

ALso I think someone asked how long it takes to bake it takes about 15- 20 min depending on the batter size/ muffin holder. Mine where huge so about 20 min.


Hey MD and Shea, how long did you bake the cupcakes?


Made these again (by request!!!) for another friend's birthday.  Some of the comments:

'These are so good, they should be illegal.'
'Please make me these every day for the rest of my life.'

They were completely devoured in about 15 minutes - most people had at least two.  ::)


I made this as cupcakes and it was perfect.  My friend now wants this as her wedding cake.  ::)


I've made this a few times and it's always great! Very moist and dense, all of my omni family loved it for easter. I've always had to bake it for over 40 min. though.


I finally made this after having it in my recipe box for years! Since I was making it just for myself to snack on, I decided to go the slightly healthier route of using half whole wheat flour and flax-eggs.  I was afraid it would be like lead, but it's really excellent--not heavy and quite delicious.  I didn't bother with frosting.  Great stuff!


This cake was super easy to make and turned out delicious!  I'm only sorry I haven't gotten around to trying it sooner.  I used 1/2 whole wheat flour and 1/2 white flour and it still had a nice texture.  I did add raisens to but only because I like them and had an empty bag to use up.  The cake really doesn't need much in the way of frosting as it has plenty of flavor on it's own so I just sprinkled a little confectioners sugar on top.  Will definately make again! 


I agree with the rest...........very yummy.  Made into cupcakes and frosted.  Used more applesauce and less oil and reduced the sugar to 1 cup.  Gone in 2 days.  Might try adding raisens and walnuts next time.


Awesome. I had all the ingredients in the house, so I made it exactly except I replaced the baking soda with 3 tbs of baking powder because I didn't have baking soda on me. It was gone in 2 days, and I was told it was "really good. You're becoming a better cook."
