Carrot Raisin Banana Bread

What you need: 

3 cups whole wheat flour
4 teaspoons baking powder
1 teaspoon sea salt
3 teaspoons cinnamon
2 bananas
1 cup dry sweetener
2/3 cup oil
2 teaspoons vinegar
2 teaspoons vanilla extract
3 cups grated carrots
1 cup raisins
1/4 cup water (only if it seems to dry)

What you do: 

1) Preheat oven to 350 degrees Fahrenheit.
2) Sift flour, baking powder, salt and cinnamon. Set aside. Mash the bananas in a bowl, and then add the sweetener, oil, vinegar and vanilla and mix well. Stir in the carrots, and raisins. Add to the dry ingredients and mix well. Add water if needed.
3) Spoon the batter equally between two oiled loaf pans. Cook for 50 minutes, test with knife to see if it is done, and let cool before cutting. And then eat your little hearts out!
Source of recipe: I had a lot of carrots that needed to be used, so I made this recipe, and the kids (who are picky little eaters) ate an entire loaf in the afternoon....okay I may have helped them out a little! ; )
