Carrot Nog

What you need: 

1/3 cup coconut milk
1/2 cup carrot juice
1 1/4 cups nondairy milk (I use soy)
2 teaspoons sugar (I use organic evaporated cane juice)
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg

What you do: 

1. Whisk or mix the coconut milk to smooth if its texture is very lumpy or uneven.
2. Combine all the ingredients in a blender or food processor for 4 minutes.
3. Pour into two separate cups and serve. May be garnished with a sprinke of nutmeg and a finely grated carrot.
Enjoy.
Source of recipe: I wrote this recipe after enjoying the wonderful Carrot Nog from a local health food complex that serves food. Expect a delicately sweet and creamy carrot based nog that makes your typical egg nog look green.
