The Carrot Haters Carrot Pudding-Thingy
1/3 cup shredded carrot
6 tablespoons almond milk, soy would be fine...I just happen to have almond.
4 tablespoons sweetener of choice to taste
cinnamon, to taste
ground cloves, to taste
pumpkin pie spice, to taste
1 teaspoon vanilla
This recipe is good for that unwanted bag of carrots you find living in your fridge. The measurements are approximate and how much I used to make myself one little serving.
Okay, so I'm not a carrot fan. I bought a baggy of shredded carrot for some recipe...but it ended up too carroty, (of course). So here's what I did.
Steam the carrots for about half an hour (until they are very limp and mushy, the mushier the better).
Then mush them up with a fork, you could also blender-ize them for creamyness (but hey, that’s a lot of work for this carrot experiment I was trying out).
Add in about teaspoon of cornstarch, and mix well.
Heat a little pot to medium-heat. Dump carrots in said little pot and add the milk, sweetener and spices. Mix well.
Keep stirring while it heats. Let it come to a boil and brig it back down...let it cook for maybe 5-7 minutes. Once it seems a nice orangey mush take it off the stove and eat.
Lol....it looks like a weird gloppy thing. It scared my husband. he ran away.
It didn’t have carroty taste at all, which was wonderful. It's something interesting to mess around with, you know?
It could be a "dessert soup" or something haha...and put a sprig of mint on it or something.
