Carrot Hashbrowns

What you need: 

3 potatoes, peeled and grated
3 carrots, peeled and grated
1 onion, peeled and grated
1 tablespoon oil
salt and pepper, to taste

What you do: 

1. Combine potatoes, carrots and onion in medium bowl and mix well. Salt and pepper, to taste.
2. Heat oil in skillet. Dump in potato mixture and form into a large pancake.
3. Cook until browned on one side, and then flip over and repeat. Serve cut into wedges, or just break it up.
Can be served plain, or with applesauce, or vegan sour cream. Yummy, and pretty too!

SO HOW'D IT GO?

i just made these, i added flaxseed and flour because i was afraid of them breaking up, they sucked up a lot of oil, but other than that they were great!

So tasty!!  But I had to fight to get it to stay together.  I used olive oil, and seasoned with celery salt.  I dipped it in ketchup.  Yum yum yum.

Okay a few helpful tips:

1) If you dont want to make huge portions cut the recipe. I made this with 1 carrot and 1 semi large potato, that still gave me 12-15 small/ medimumish hash browns. Great for 2 - 5 people, also if you are making MINI ones like me then I suggest forget the oil and break out your cooking spray.

and

2) If you are impatient then this is not the recipe for you. Because there is no added flour/ binding agent it will take a little bit longer then 10 min on low heat. Yes low, medium is unpredictable and high will definitely burn them before they are even cooked. You can tell when they are ready when the potato's go from white to a translucent yellowish colour. Flip over and you might have to wait up to 5 min for the other side.

Other then that ENJOY!

I made this with garlic powder (as suggested) and reduced the onion to 1/8th and served with baked beans! My husband was so happy he ate it in 2 min... when it took like 30 min to make it this morning.  ^-^

Turned out very well! I dont like onion but it went well with the potatoe and carrott! Thanks for the recipe!  :)
