Oh my goodness, I just  tried out this recipe and it was delicious. I didn't use any fruit or vanilla but used half white sugar, half brown and it was amazing. I just wish it were a little healthier. So good though, thank you.

I made these a couple of weeks ago to satisfy a carrot cake craving, and they're really wicked good.  My fiance's been asking for them since, so we just made them again tonight.  They'll definitely become a standard at our house.

The first time I used oil instead of margarine and maple syrup in place of the sugar.  That provided enough moisture for the dough to stick together perfectly.  The second time we used brown sugar, and then had to add some water to get it all to stick right.  They still came out well.  Oh, and no need to sprinkle sugar on top.  I haven't remembered yet, and haven't missed it.  We bake them at 350 for about 20 minutes.

Thanks for a great recipe!

Mine kind of looked like carrot puffs. They were tasty though. I processed fresh carrot, crushed pineapple, allspice, flour, brown sugar, and margarine. I think I might add some salt next time. Interesting flavor. Not overly sweet.
