Carob People and Puppy Chow

What you need: 

1/2 cup coconut oil
1/2 cup peanut butter (or other nut butter)
2-4 tablespoons coffee substitute powder, optional (I use Roma)
1 box (about 14 ounces) vegan rice or corn square cereal (Chex equivalent)
1/2 to 1 cup carob powder
1/2 cup powdered sugar, optional

What you do: 

1. Melt coconut oil and peanut butter either on the stove top or microwave in a large container (this is where you'll be mixing everything). They should be nice and liquid and well blended.
2. If you're using the coffee substitute powder, blend it in at this point. Add the dry cereal and toss really well to get it all coated.
3. Sift in the carob and powdered sugar, if using. Keep tossing and coating until it's all dry looking and coated with carob powder. It should look a lot like dry dog food.
Enjoy! This is best kept in the fridge if it's warm. The nice thing about this recipe is that the carob adds enough sweetness that you really don't need any extra sugar. Carob is great for kids, and dogs can actually enjoy it too, unlike chocolate!
