Cantaloupe Muffins

What you need: 

1 cup of flour
1/2 cup of oats
3/4 of a cup of brown sugar
1/2 teaspoon of salt
2 teaspoons of baking powder
1/4 teaspoon of ginger
1/2 teaspoon of cinnamon
pinch of allspice or nutmeg
1 cup of cantaloupe puree
canola oil cooking spray or muffin baking cups

What you do: 

Based on Simple Muffins recipe on VegWeb.
Preheat oven to 400 Fahrenheit.
Combine flour, oats, sugar, salt, baking powder, ginger, cinnamon, and nutmeg in a mixing bowl. Mix well.
Cut about a third of a cantaloupe into chunks and throw into a food processor. Puree until you get one cup.
Add puree to mixing bowl. Mix together.
Place baking cups in muffin pan or spray muffin pan with cooking spray. Pour mix into muffin pan.
Bake for 20 to 25 minutes. Keep an eye on the muffins, and when they look and smell done take them out of the oven.
