Cannellini Picata

What you need: 

2 tablespoons olive oil
1 small onion, chopped
1 glove garlic, minced
4 tablespoons flour
1 1/2 cups vegetable broth, warmed
1 (15 ounce) can cannellini beans
2-3 tablespoons fresh lemon juice
salt, to taste
cooked rice, noodles, or pasta, to serve

What you do: 

1. Saute onion and garlic over medium heat in oil until onion softens. Add flour and stir until the flour starts to slightly brown.
2. Slowly add the warmed broth to the flour mixture, stirring to prevent lumps.
3. When mixture thickens, add beans. Add lemon juice and salt, to taste.
4. Cook until thickened and bubbly. Serve over hot rice, pasta or noodles.

SO HOW'D IT GO?

So I tried this again. I did better this time. I added fresh basil, nutritional yeast and kale to the bean mixture and served over whole wheat pasta. I had broccoli and a piece of toast with EB on the side. Very filling and satisfying dinner. Thanks for the recipe.

It was so so I thought, but maybe it was because it was served over pasta.  It wasn't bad, a bit bland, but if filled me up.  I followed the recipe pretty close, except I used pinto beans, since that was what I had on hand at the time.

I am thinking that this would be better in a tortilla with some fresh spinach and tomato.  I will use the leftovers for that purpose.

really good. better than my mom's non vegan one. i didnt have broth/stock, so i went for braggs mixed with water. truned out delicious. and i added nut yeast, a good amount right after addin the flour. addin this one in my recipe book

This was great!  I added extra lemon and garlic, as well as some fresh basil from my garden.  Ate over spiral pasta and topped with a couple of sun dried tomatoes---Voila!

I made this tonight for dinner over pasta, it was sooo good! I added spinach and tomatoes in to give it color and some tasty amounts of iron.  I used 3 tablespoons of lemon juice and thought it was perfect like that. My omni husband loved it as well!

I'm not saying that the recipe is bad, but I tried a version w/o the lemon juice, I used plain cannellini out of the can and rice and it lacked taste for me.

Maybe because lemon juice is essential to any picatta. It doesn't work without it.

This recipe was really good. I used great northern beans instead of cannellini.  Despite what the first comment says, it does reheat well and tasted great to me.  Actually, when it's cold it's also pretty good, it has a tuna fish texture and could be used as that kind of substitute.

i've made this several times since with pasta and rice and I have to say I like the rice better. But I'll def have to add some spinach next time...not sure why I didn't think of it before!
