Cabbage Soup

What you need: 

5 cups water
3 bouillon vegan beef flavor cubes
1 large onion
4 slices vegan bacon
2 cups carrot, chopped
1/2 cup tomato, diced
1 small head cabbage
1/2 cup celery, chopped
1 tablespoon minced garlic
1/4 cup fresh parsley, chopped
1 1/2 tablespoons sugar
2 bay leaves
1/2 cup potato, diced
2 cups vegan kielbasa

What you do: 

1. Combine water and boullion cubes in a large pot. Saute slices of vegan bacon and chopped onion in pan.
2. Deglaze with some liquid and add to the pot. Also add to the pot the carrots, tomato, cabbage, celery, garlic, parsley, sugar, and bay leaves.
3. Cook for 1 hour on medium heat. Add the potatoes. Cook 20 minutes. Then add the vegan kielbasa and cook for another 20 minutes. Enjoy!

SO HOW'D IT GO?

I left out all faux products and added extra carrots and celery. I also used vegetable bouillon vs. beef vegan cubes. I added a few sprinkles of sage. My kitchen smells heavenly! Delicious.

I loved this soup! Even my sister who says she does not like cabbage tried it and liked it.  The only thing I was skeptical of was the vegan bacon.  I did it, but it just fell apart in the soup and looked gross so i picked it all out.  I feel this step is unnecessary and I will omit it next time, and there definitely will be a next time.  Thanks for this recipe.
