Cabbage Casserole

What you need: 

1 cup rice
1 small head cabbage, shredded or chopped finely
1 large jar (20 ounces) spaghetti sauce
1 cup water
1 cup mushrooms, sliced

What you do: 

1. Preheat oven to 350 degrees F. In a dry, nonstick skillet fry the rice until its brown in color. Then put half of it in the bottom of a large casserole dish.
2. Layer half of the shredded cabbage on top of it. Mix the water and the spaghetti sauce and then pour half of it over the cabbage.
3. Spread half of the mushrooms over this. Then repeat layers. Bake for about an hour.'

SO HOW'D IT GO?

I really liked this, so did my non-vegan sister! I would recommend cooking the rice first, it was edible but had a few crunchy bites....also I made it agian and used black beans instead of mushrooms....I also sprinkles a little nutritional yeat on top and it was AMAZING!  :)
