Cabbage Bean Pie

What you need: 

Crust:

1 cup flour

1/2 cup oats

2 tablespoon Lecithin

1 cup water

 

Pie filling: (makes enough for 3 pies)

1/2 head of green cabbage, chopped

3 onions, diced

4 stalks of celery chopped

5 organic carrots chopped

10 roma tomatoes, peeled and chopped

5 cloves garlic

3 teaspoons Olive oil

2 tablespoons Tamari sauce

6 cups of cooked beans (1 small pkg. pinto and 1 small pkg.  garbanzo)

1  tablespoon Lemon pepper

 

What you do: 

1. In a large pot, cook the beans in 6 quarts water, and

In a large bowl, mix the dough for pie crust.
2. Put in greased 9 inch pie plate. Bake for 10 minutes to preheat crust.
3. In a large stir fry pan or skillet: Stir fry pie filling ingredients, after all vegetables have been chopped, beginning with onions and garlic.
4. In a large blender, puree the mixture. It will make it easier to chew and more digestible.
5. Add to pie crust and bake 30 minutes sbout 350 degrees F.
