Cabbage and Potatoes

What you need: 

3 tablespoons vegan butter
3 tablespoons olive oil
3 Yukon Gold potatoes, diced and sliced
1 white onion, diced
1 teaspoons salt
1 teaspoon black pepper
1 head cabbage, shredded
1 tablespoon red wine vinegar
1 to 2 tablespoons of lager and/or water

What you do: 

1) Add vegan butter and olive oil to a medium sized pot and allow to melt. Add potatoes to the pot and allow to become golden brown, about 10 to 15 minutes.
2) Add onion, salt, and pepper, mixing to combine. After the onions have become translucent, add the shredded cabbage. The cabbage will begin to wilt. As it does this, add the red wine vinegar and the lager and/or water. Simmer for 30 minutes.
Notes: If you feel, add more vegan butter or olive oil as the cabbage begins to wilt. Stir during this process and mix it with the onion and potato. For the lager, I use Harp's which is vegan.

Love cabbage and potatoes  :)>>> I cut down on the oil and added carrots! so good.

I made this for supper last night and it was very good!  Even the omnivores in the family liked it!  My 6 year old (who tells me not to give him that vegan stuff) ate it up!  a couple of changes I made where I do not know what lager is, so I am pretty sure I don't have it.  I just added more of the red wine vinegar instead.  I did use more salt and pepper and added some paprika just because I think it helps brown things better.

I will definitely make this again!  Thanks for the recipe!

Glad you liked it! Lager is a style of beer. It's optional for this recipe. Paprika sounds good with this. I'll have to try it myself!
