Bulgur and Vegetable Salad

What you need: 

1/4 cup cracked wheat or bulgur
1 cup tomato, chopped
1 cup zucchini, chopped
1 cup yellow squash, chopped
1/2 cup vidalia onion, sliced
1/4 cup green pepper, chopped
1/4 cup carrots, chopped
1 clove garlic, minced
1 tablespoon olive oil
2 tablespoons red wine vinegar
salt to taste
pepper to taste
1/2 teaspoon oregano
1/4 teaspoon garlic powder

What you do: 

Cook cracked wheat according to package directions, until water is absorbed.
Combine all ingredients in a large bowl.
Cover with plastic wrap and chill for at least an hour.
This recipe can easily be altered to fit anyone's tastes. Add tofu or another meat replacement product to make it more of a main dish, though I didn't feel the need to do so. Also makes a great side dish for food cooked on the grill. Best made with fresh, in-season, farmer's market vegetables.
